I'd never used filo before but it was a doddle!
Helps if you wet it a little.

- Olive oil, 3 tbsp
- Salt, ½ tsp
- Egg, 1
- Toasted sesame seeds, 1 tbsp
- Phyllo (filo) pastry sheets, 8 sheets
- White cheese (feta or akkawi), 150g
- Spinach or mixed greens, 100g
- Za'atar spice blend, 2 tbsp
- Butter (melted), 30g
